Ingredients

  • 2 Tablespoons sour cream
  • 1/2 teaspoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 8 oz ground beef (or turkey)
  • 1/2 cup kidney beans, rinsed
  • 1 teaspoon chili powder
  • 4 cups shredded lettuce
  • 1/4 cup shredded cheese

Preparation

Step 1

Heat oil in a medium nonstick skillet over medium heat. Add onion and garlic and cook, stirring often, until softened, 1 to 2 minutes. Add beef and cook, stirring often, until cooked through, 3-5 minutes. Add beans and chili powder; cook, stirring, about 2 minutes. Remove from heat.

Divide the lettuce, cheese and meat mixture. Top with tomato, sour cream, and tortilla chips.
