Ingredients

  • 6 cups shredded hash browns
  • 1/2 c butter, melted
  • salt & pepper to taste
  • 2 cups (16 ounces) cooked Italian sausage
  • 1/2 cup green onions, diced (or 1/2 cup diced onion)
  • 1 cup cheddar cheese, shredded
  • 1 cup monterey jack cheese, shredded
  • 10 eggs
  • 1/2 cup 2% milk
  • 1/2 cup heavy cream
  • 1/2 teaspoon garlic powder (next time increase to 1 teaspoon or use 2 garlic cloves, minced)
  • Optional
  • 2 cups broccoli florets
  • 1 cup red or green pepper, diced

Step 1

Preheat oven to 425 degrees.
Spray baking dish with non stick spray.
Mix the melted butter, hash browns and salt & pepper. I use 2 packages of Simply Potatoes shredded, in the grocery refrigerated section. If you use frozen thaw and pat dry. Press into 2 8 x 8 greased pans or greased 9x13 baking dish.
Bake 20 minutes or until potatoes start to turn golden brown and starting to crisp at the edges.
NOTE 7/2017 It took 40 min to brown the crust- I am thinking due to too much moisture. Solutions - 1) let dry out for an hour, 2)zap on low in micro for 10 min,
Remove from oven. Reduce heat to 350 degrees.
Meanwhile, brown the sausage in a skillet over medium-high heat, breaking it up with a wooden spoon, until no pink remains, about 5 minutes. Set aside to cool.
Cover the hash browns with the cooked sausage and veggies. Sprinkle with shredded cheese.
Whisk eggs, milk, salt and pepper to taste. Pour other ingredients in baking dish.
Bake at 350 degrees for 40 minutes or until top is golden and a knife inserted in the middle comes out clean. If it is turning to brown before egg is set, cover loosely with aluminum foil and continue baking.
Let set for 10 to 15 minutes before serving.
