- 64 oz chicken broth + 2 cups of water
- 2 cups cooked chicken
- 1 package of Orzo pasta
- 3 eggs
- 1/3 cup lemon juice
- 1 T lemon zest
- parsley for garnish

Heat broth and water; when it comes to a boil add the orzo. Boil over medium-high heat for 15 minutes, then add the chicken for an additional 5 minutes. Place eggs in a mixing bowl and whisk to mix. While whisking, slowly add the lemon juice and zest. Take a ladle of the hot soup broth and slowly add to the egg mixture to temper. Add eggs to the soup and simmer for a few minutes. Ladle into soup bowls and garnish with parsley.
