Simple Vanilla Gelato

- 4 cups whole milk
- 1 vanilla bean, split open
- 1 cup sugar
- 3 Tablespoons cornstarch, + 2 tsp
- 1 teaspoon vanilla extract

Step 1
1. Place 3 cups of the milk in a small saucepan with the vanilla bean over medium-low heat.
2. Meanwhile, pour the remaining 1 cup milk into a large glass measuring cup. Add the sugar and the cornstarch and mix well.
3. When the milk starts to simmer, remove it from the heat and pour in the cornstarch mixture, stirring the whole time. Return the saucepan to medium-low heat and stir until things start thickening up, 10-12 minutes. It should end up thicker than say, a runny milkshake, but thinner than a frosty one.
4. Pour the milk through a strainer into a mixing bowl. Whisk in the vanilla extract and let it cool on the counter for 20 minutes or so. Put the mixture in the refrigerator until completely chilled (a couple of hours). Don't skimp here; let it get really cold or you'll end up with runny gelato.
5. Pour into an ice cream maker and freeze according to manufacturer's instructions.
This was great! And pretty easy. I agree with zackaboo - would have decreased the sugar a bit.
