salad with quinoa

Ingredients
- 2 c dinosaur kale
- 1/2 c cooked quinoa
- 1 c roasted potato/squash
- 1/4 c thinly sliced raw vegetables: bell pepper, celery,carrots,fennel,mushrooms,onion,radish,snap peas, tomato, squash
- 1/4 c salad dressing: avocado, yogurt, tahini or vinaigrette
- 1/2 avocado, thinly sliced
- 1 hard boiled egg, peeled and halved
- 2 tsp chives
- 2 tsp chopped almonds, walnut or pecan

Preparation
Step 1
place greens in bottom of bowl. add quinoa over greens. repeat with roasted vegetables, then raw vegetables.
top with dressing and toss gently. fan out avocado on top. place egg on side.
top with chives and nuts.
