Ingredients

  • 1 Spanish onion chopped well
  • 1 can Italian whole tomatoes
  • 1/2 can tomato paste
  • 1 cup vodka
  • pinch red pepper flakes
  • fresh chopped basil
  • 1/2 lb.proscuitto
  • 1/2 - 1 cup heavy cream

Step 1

Sautee onions with some butter in pan until soft.
After onions are cooked, add tomatoes, tomato paste. Cook on low until tomatoes fall apart, stirring occasionally. Add vodka, pepper flakes. Cook for another 5 minutes.
Pour tomato mixture into food processor; pulse until well blended, and no tomato chuncks. Pour back into sauce pan. On low heat, start with 1/2 cup heavy cream, stirring. Add more cream; stirring, let simmer on low for about 1/2 hour to thicken. Stir in procuitto and basil the last few minutes. Pour over rigatoni or penne pasta.
