Ingredients

  • 1 cup water
  • 1 cup tomato juice
  • 1/2 cup salsa + salsa to taste
  • 1 jalapeno,seeded and chopped
  • 1 tbsp lemon juice
  • 1 tsp salt
  • 1 small onion,peeled and roughly chopped
  • 6 sprigs fresh cilantro,stems and all +
  • cilantro to taste
  • 2 cups parboiled rice

Preparation

Step 1

Combine the water,tomato juice,1/2 cup salsa,jalapeno,lemon juice,salt,onion,and 6 sprigs cilantro in a blender.Blend until smooth.
Combine the rice and pureed liquid and cook the rice according to package directions.(Approximately 18 min.on the stovetop).While a rice cooker is preferable,rice cooked with the stovetop metod will work as well.When the rice is cooked,fluff with a fork and stir in extra salsa and cilantro,if desired.
