Ingredients

  • FROSTING:
  • 1/2 cup butter
  • 1-1/2 cups sugar
  • 2 eggs
  • 1 cup buttermilk
  • 1/2 cup mayonnaise
  • 1 teaspoon vanilla
  • 1 oz red food coloring
  • 2 cups flour
  • 1-1/2 baking soda
  • 1/2 unsweetened cocoa
  • 1 teaspoon salt
  • 1/2 butter
  • 1 8 oz cream cheese, softened
  • 1 teaspoon vanilla
  • 4 cups confectioners sugar

Preparation

Step 1

Preheat 350. Grease and flour two 9 inch round cake pans and set aside.

For cake, dry ingredients in a small bowl and set aside.

In a large bowl, mix butter, sugar and eggs until blended. Add buttermilk, mayonnaise, vanilla extract and food color and mix until smooth. Slowly add the dry ingredients to the wet ingredients and blend until combined. Pour into prepared pans and bake 30 minutes or until toothpick comes out clean.

For Frosting: Combine butter, cream cheese and vanilla extract and beat until uniform and smooth. Add 1 cup confectioners sugar at a time, beating after each cup.
