Ingredients

  • 4 cups plum tomatoes, coarsely chopped
  • 1 teaspoon sugar
  • 2 tablespoons olive oil
  • 4 chicken breasts, boneless and skinless, cut in 1-inch slices
  • 6 Italian sausages, cut in 1-inch slices
  • 1 onion, peeled and chopped
  • 1 green pepper, seeded and chopped
  • 1/4 pound mushrooms, sliced
  • 1 clove garlic, diced
  • 1 teaspoon oregano
  • 1/2 cup chicken broth
  • 3/4 cup white wine
  • saalt and epper to taste

Preheat oven to 350 degrees

In a large, heavy saucepan, bring the tomatoes to a low boil and cook until reduced to about 2 cups. Stir in the sugar and remove from the heat.

Grease a 2 to 2 1/2 quart casserole dish.

In a large, heavy skillet, heat the oil over medium heat. Add the chicken and sausage and brown on all sides, about 10-15 minutes. With tongs, transfer the chicken to the prepared casserole, then arrange the sausage over the chicken.

Pour off all but 2 tablespoons of the fat from the skillet. Add the onion, bell pepper, mushrooms and the garlic and stir until softened, about 5 minutes. Spoon the vegetables over the chicken and sausage.

Add the tomatoes, oregano, broth and the wine. Season with salt and pepper to taste.

Cover and bake in a 350 degree oven until the chicken and sausage are very tender, about 1 hour.

Serve hot with pasta or rice.
