  • 1 3/4 cups heavy cream
  • 4 Tbsp superfine sugar
  • vanilla extract
  • 1 1/4 tsp powdered gelatin
  • 1 cup fresh berries

Step 1

1. Put the cream and sugar in a saucepan and stir over gentle heat until the sugar has sidled. Bring to a boil, then simmer for 3 minutes, adding a few drops of vanilla extract to taste.
2. Sprinkle the powdered gelatin onto the hot cream in an even layer and allow it to sponge for a minute, then stir it into the cream until dissolved.
3. Pour the cream mixture into four 1/2 cup metal dariole molds, cover each with plastic wrap, and refrigerate until set.
4. Un-mold the pan cotta by wrapping the molds in a cloth dipped in hot water and tipping them gently onto individual plates. Serve with the fresh berries.
