Ingredients

  • 1 pound lean ground beef or chuck
  • 16 ounce jar of medium or hot salsa
  • 1 package frozen corn
  • or 1 can of corn, drained
  • 1 1/2 cups water
  • 2 teaspoons chili powder
  • 1 1/2 cups white medium-grain rice,
  • rinsed several times and drained
  • 4 ounces ( about 1 cup)
  • shredded Monterey Jack cheese

Preparation

Step 1

Brown the burger and drain off grease. Add the salsa, corn, water, chili powder, and rice. Bring to a boil, cover, and simmer 7 minutes, until liquid is absorbed. Fluff the rice, then add the cheese. Cover and let stand until cheese has melted.
