  • 3 Tbsp apple cider vinegar
  • 2 Tbsp olive oil
  • 1 Tbsp sugar
  • 1 Tbsp chopped fresh thyme
  • 1/4 tsp cayenne
  • Add; Toss:
  • 1 Cup cooked rice, cooled
  • 1 Can black-eyed peas, drained and rinsed (15oz)
  • 1 Cup red bell pepper, diced
  • 1/2 Cup scallions, chopped
  • Salt and Pepper
