Ingredients

  • milk
  • 1 cup flour
  • 1/2 cup lightly packed brown sugar
  • 4 tsp Baking powder
  • 1 tsp cinnamon
  • 1/2 tsp allspice
  • 1/2 tsp salt
  • 2 eggs
  • 1/4 cup vegetable oil
  • 3/4 cup whole, frozen cranberries (do not thaw)
  • 1 cup carrot/apple pulp

Preparation

Step 1

1. Pre-heat oven to 400 degrees.
2. Combine cereal with milk for about 2 minutes.
3. Combine flour, sugar, BP, spices and salt in a large bowl. Mix.
4. Beat eggs and add oil. Add egg mixture to the cereal mixture, mixing gently.
5. Add the wet ingredients to dry ingredients, stir until just mixed.
6. Spoon into 10 muffin tins.
7. Bake 20-23 minutes, or until toothpick inserted in the middle comes out dry.
