Ingredients
- 2 cups riced Cauliflower
- 2 eggs
- 1 onion small diced and caramelized (optional)
- 1/4-1/2 cup shredded cheese of choice
- 1/4-1/2 cup parmesean cheese
- 1/4-1/2 cup panko bread crumbs
- salt and pepper to taste

Step 1
Preheat oven at 425 degrees
Grate cauliflower and cook in microwave for 8 minutes. Let cauliflower cool enough to handle. Place cauliflower in a dish towel or cheese cloth. Ring so all excess water comes out.
Mix all ingredients together. Form tots using tablespoon measuring spoon (not utensil spoon).
Place tots on parchment paper lined baking sheet.
Cook for 20 minutes and turn over. Cook for additional 15-20 minutes until desired golden color.
