Ingredients
- 3 Tbsp. lemon juice
- 2 Tbsp. red onion, minced
- 3 tea oregano, chopped
- 1 garlic clove, minced
- 1/8 tea. salt
- 1/8 tea. pepper
- 1/8 tea. sugar
- 4 Tbsp. olive oil

- 2 hearts of romaine, chopped (8 cups)
- 1 medium-sized cucumber, peeled, seeded and cut into 1/2" pieces
- 2 cups cherry tomatoes, quartered
- 1 14-oz can chickpeas, drained and rinsed
- 1/2 cup chopped parsley
- 1/3 cup[ chopped pitted kalamata olives
- 5 oz. feta cheese, crumbled

Preparation
Step 1
In a small bowl, whisk together lemon juice, red onion, oregano, garlic, salt, pepper and sugar. Slowly whisk in olive oil.
In a large serving bowl, combine romaine, cucumber, cherry tomatoes, chickpeas, parsley, kalamata olives and feta.
Drizzle with dressing and toss well to coat, serve immediately.
