Ingredients

  • FILLING:
  • 1 c dried cranberries
  • 1/4 c sugar
  • 1/2 tsp cornstarch
  • 1/4 c white grape juice
  • CRUST:
  • 1 1/4 c all purpose flour
  • 1/2 tsp baking soda
  • pinch salt
  • 1/2 lowfat cream cheese
  • 1/2 c brown sugar
  • 1 egg
  • 3/4 tsp vanilla
  • 1 1/4 c rolled oats / quinoa flakes
  • 2 TBL molasses

Preparation

Step 1

1. Preheat oven to 350o. Lightly spray a sheet pan with canola oil spray.
2. In a small bowl, combine cornstarch and white grape juice. In a food processor, chop cranberries. In a small saucepan, over medium heat, combine cranberries with sugar and juice/cornstarch mixture. Cook until thickened.
3. In a food processor, blend cream cheese and brown sugar until creamed. Add remaining crust ingredients and pulse until just combined.
4. Press half of crust mixture onto sprayed sheet pan. Pour cranberry mixture evenly over crust. Top with remaining crust mixture.
5. Bake for 15-20 minutes or until golden brown. Let cool and cut into 16 pieces.
