Ingredients

  • 1/3 cup all-purpose flour
  • 1 Tbsp cocoa powder
  • 1 tsp ground ginger
  • 1/2 tsp ground cardamom
  • 1 tsp ground cinnamon
  • 3/4 cup dried figs, chopped
  • 1/4 cup glace ginger, chopped
  • 1/4 cup glace pineapple, chopped
  • 1/4 cup glace apricots, chopped
  • 1/4 cup chopped candied citrus peel
  • 1 cup blanched almonds, toasted
  • 1/3 cup superfine sugar
  • 1/4 cup honey

Preparation

Step 1

1. preheat the oven to 315 degrees F. Lightly grease a shallow, 3x10 inch baking pan and line with waxed paper, allowing paper to hang over at the two short ends.
2. Sift the flour, cocoa, ginger and spices into a large bowl. Add the fruit and almonds.
3. Heat the superfine sugar, honey and 2 teaspoons water in a small saucepan, over low heat, stirring until it's melted and just comes to a boil. Pour onto the dry ingredients and mix well. Press the mixture into the pan and bake for 35-40 minutes or until just firm. Cool in the pan, then chill until firm. Cut into thin slices
