Ingredients

  • YOGURT SAUCE:
  • 3 cobs of corn (More that this won't fit)
  • 1 - 2 teaspoons spicy salt (I used Weber chili lime spice mix with a good pinch of fine sea salt - the spice didn't come through so be generous with it)
  • 2 green onions, thinly sliced
  • 3 teaspoons EVOO - Try garlic-infused next time
  • 1/4 cup greek yogurt
  • 1 tsp. honey
  • 1/2 lime, juiced and zested, plus wedges for serving
  • 1/2 tsp. ground cumin
  • 1 pinch chili power or cayenne
  • 15 grams freshly grated parmigiano reggiano
  • Kosher salt and freshly cracked black pepper

Preparation

Step 1

Cut each cob of corn into four equal pieces.

Pour the oil into the Actifry, add the corn and the spicy salt.

Cover and cook for 20 minutes (it originally called for 65 minutes!)

Add the sliced green onions and cook for 7 or 8 minutes longer. They aren't necessary but they get nice and crispy with the bits of corn that have fallen off the cobs while cooking.

I liked the yogurt sauce for dipping but Dan said he would have liked the mexican version with the mayo and the feta cheese - no reason why that shouldn't work too.
