Ingredients

  • 2 Tbsp. butter
  • 1 Tsp. dried sage
  • 1 garlic clove, crushed
  • 1/8 Tsp. black pepper
  • 1 whole chicken (about 3 lbs.)
  • 1 Tsp. dried rosemary
  • 1 onion, peeled
  • 2 C. chicken broth
  • 6 oz. new ptatoes, parboiled
  • 3 bell peppers cut into quarters
  • 2 med. zucchini, cut into chunks
  • 1 red onion, sliced
  • 1 Tbsp. olive oil
  • flat leaf parsley sprigs for garnish

Step 1

Preheat oven 375. In bowl, combine butter, sage, garlic and pepper. Loosen chicken skin. Spread half of herb mixture under skin. Rub rest on top. Sprinkle with rosemary. Place onion in chicken cavity and tie legs with kitchen string.

Place chicken in roasting pan and pour broth into pan. Cover with foil and roast 1 hour.

Uncover chicken and roast until juices run clear when chicken is pierced. About 40 minutes longer. Transfer to serving dish. Let stand 15 min. before serving.

Meanwhile, place potatoes, zucchini, peppers and onion slices in baking tray. Drizzle with oil. Roast 35-40 min. until cooked and crisp on edges. Arrange around chicken along with parsley to serve.
