Flat Belly - Herb-Marinated Beef and Mushroom Kebabs

Ingredients

  • 1 lb beef tenderloin, trimmed and cut into 20 cubes
  • 3 tbsp chopped fresh basil
  • 3 tbsp chopped fresh parsley
  • 1 tbsp extra virgin olive oil, divided
  • 1 clove garlic, minced
  • 1 tsp dried oregano
  • 16 white mushrooms
  • 1 red bell pepper, seeded and cut into 16 pieces
  • 1/4 tsp salt
  • 4 tbsp Pesto

Preparation

Step 1

1.) Combine the beef, basil, parsley, 1 tsp of the oil, the garlic, and oregano in a bowl. Refrigerate for 2 hours or overnight. If using bamboo skewers soak them in water for at least 30 minutes.

2.) Preheat the broiler and coat a broiler pan with cooking spray.

3.) Thread 5 beef cubes, 4 mushrooms, and 4 bell pepper wedges alternately onto each of 4 skewers. Brush the skewers with the remaining 2 tsp oil. Sprinkle with the salt. Broil 5" from the heat source turning occasionally, for 8 to 10 minutes or until the beef is cooked to the desired doneness and the vegetables are tender. Brush each with the pesto and serve immediately.
