Vegetable Barley Soup

Ingredients
- 1/2 cup Parled Barely
- 1/2 cup Diced Carrots
- 1 tsp. pepper
- 6 cups Vegetable Broth
- 1 small bunch Parsley (for garnish)
- 1/2 cup Dried Split Peas
- 1 tsp salt
- 1/2 Onion diced
- 1/2 cup Celery
- 1/4 cup cheese ( to top individual bowls)

Preparation
Step 1
1. Dice onions, celery and carrots. Set aside.
2. Add 6 cups of vegetable broth into a large pot. Add in the pearl barley and carrots. Bring to a
boil
3. Add in the rest of the ingredients then simmer. Cover the pot and simmer for about 1 hour.
4. Monitor the soup.
5. Serve with a bit of cheddar cheese sprinted on top of the soup and garnish with parsley. Can also all sirracha and soy sauce for seasoning.
