Ingredients

  • Cheesy Yum:
  • 3/4 lb ground beef
  • 3/4 lb sweet Italian sausage
  • chopped onion to taste
  • garlic to taste
  • 2 teaspoons dried oregano
  • 1/2 teaspoon crushed red pepper flakes
  • 1 Tablespoons tomato paste
  • 1- 28 oz can diced fire roasted tomatoes
  • 2 bay leaves
  • 3-4 cups chicken stock
  • 8 oz mafalda or fusilli pasta. You can also use lasanga noodles broken into small pieces
  • 1/2 c finely chopped fresh basil
  • Salt and pepper to taste
  • 8 oz ricotta
  • 1/2 cup grated parmesan
  • 1/4 tsp salt
  • pinch of fresh ground pepper
  • Topping:
  • 2 cup shredded mozzarella

Preparation

Step 1

Brown meat and then add onion and garlic. Cook until softened. Add next 6 ingredients (spices, tomatoes and stock) and bring to a boil. Then reduce heat and let simmer for 30 minutes. Add uncooked pasta and let cook until pasta is al dente. Just before serving, add in basil and salt/pepper.

While pasta is cooking prepare the cheesy yu. Combine ingredients in a small bowl and mix well.

To serve, put a spoonful of cheesy yum in the bottom of the bowl and ladle soup over it. Top with shredded mozzarella and enjoy.
