Ingredients

  • 1 quart size mason jar
  • Enough asparagus to fit vertically within the mason jar(should be about 1.5 pounds)
  • 5 cloves of garlic
  • 1 teaspoon black peppercorns
  • 1/2 teaspoon of chile pepper flakes
  • 4 dried sweet red chiles
  • Tannin containing leaves for crunch(1 grape leaf or bag of black tea will work as well)
  • Brine with a ratio of 3 tablespoons per quart of water

Preparation

Step 1

Cut the asparagus so they are roughly 5" long, removing all of the woody ends
Places the spices and tannin leaves (if you are using them) at the bottom of the mason jar
Pack the asparagus into the mason jar so they are all standing up
Hammer the garlic so it breaks then fit the garlic and dried chiles between the asparagus pieces
Pour the brine and ensure the brine is covering all of the asparagus
Place on your Easy Fermenter lid and let ferment for 5-9 days.
Pickled asparagus should last about 12 months in the fridge, but note the flavor will intensify over time.
