Coffee-rubbed skirt steak

This is an amazing steak and one could never guess the ingredients in the rub.

- 2 T plus 1 teas light brown sugar
- 1 T instant coffee
- 1 teas unsweetened cocoa powder
- 1 teas mustard powder
- 1/2 teas ancho chile powder
- 1/8 teas ground cinnamon
- Kosher salt
- 1 1/4 to 1 1/2 lb skirt steak, cut into pieces 4-8
- 2 teas vegetable oil
- 1 large onion cut into wedges
- freshly ground pepper
- 1 green pepper, cut into strips
- juice of 1/2 lime

Combine 2 T brown sugar, instant coffee, cocoa powder, mustard powder, chile powder, cinnamon and 1 teas salt in a bowl. Rub the mixture between your fingers until fine. Season the steak with salt then generously rub the coffee-spice mixture on the steak. Heat the oil in a large cast iron skillet over medium heat. Sear the steak 3 to 6 minutes per side for medium rare. Transfer to a cutting board and let rest. To the reserved juices in skillet add 1 teas brown sugar and the onion . Sprinkle with1/4 teas salt and pepper to taste. Cook over medium-high heat, stirring frequently until the onion is soft and golden about 5 minutes. Add the bell pepper snd 1/4 c water, cook stirring until crisp-tender about 5 minutes. Stir in lime juice. Season with salt and pepper. Slice the steak against the grain. Put steak on top of pepper and onion mixture on separate plates. Can serve with lime wedges.
