Spicy Mediterranean Chicken

Ingredients
- 4 large chicken breasts, boneless skinless
- 1 Zucchini cut into large match stick sized pieces
- 1 yellow squash cut into large match stick sized pieces
- crumble feta
- 4 slices prosciutto
- 2 14.5 oz cans Italian stile diced tomatoes
- 1/4 C tomato paste
- 1/2 C red wine
- 1 T Italian seasoning
- 1 t salt
- 1/2 t red chili flakes
- 1 t minced garlic
- 1 T EVOO

Step 1
Butterfly and pound flat each breast. Place a slice of prosciutto on each breast.
Add 1/4 of the zucchini and squash onto each breast and then top with some of the feta to taste. Roll up each breast and close with toothpicks, season very well with salt and black pepper. Bake at 350 F until the chicken is 165 degrees F.
While the chicken is cooking add EVOO to a small sauce pan and bring to heat. Add garlic and cook for 30 seconds and then add the drained tomatoes and tomato paste and chili flakes. Stir well and then add the wine and stir again. Add the Italian Seasoning and stir again. Allow to reduce by 1/4 and then taste for seasonings.
To serve, remove all toothpicks, place one breast on each plate and top with the sauce.
