Meat Loaf with Ricotta

Ingredients
- 1 lb. chopped lean beef or half beef and half veal
- 1 cup bread crumbs
- 3 eggs
- 4 Tbsp. olive oil
- 1/2 cup granted Romano Cheese
- 1 1/2 Tbsp. chopped parsley
- 1/2 cup water
- 1 small onion, chopped
- 3/4 lb. ricotta cheese
- Salt and Pepper to taste

Step 1
Mix meat, bread crumbs, water, 1 Tbsp. of parsley, grated cheese, 2 eggs, onion, salt and pepper, very thoroughly. Mix ricotta, 1 egg, 1/2 Tbsp. parsley and a pinch of salt until well blended.
Brush 10" Pyrex baking dish with 2 Tbsp. oil. Sprinkle lightly with 2 additional Tbsp. of bread crumbs, Place half of meat mixture in dish. Spread ricotta mixture over this and top with balance of meat. Close edges firmly so ricotta does not ooze out. Brush with balance of oil. Bake about 30 minutes in hot oven or until meat is golden brown but not dry and ricotta is firm.
