  • 2 lb (1 kg) Yukon Gold potatoes
  • 3/4 cup (175 mL) half and half cream
  • 1/2 stick (1/4 cup) unsalted butter
  • Sea salt and freshly ground pepper

Step 1

Scrub potatoes under running water to remove any dirt; cut into 1/2" cubes and place into a heavy-bottomed pot. Add enough water to the pot to barely cover potatoes. Cover pot and place over medium-high heat; bring to a boil then reduce heat to a simmer. Cook for about 25 minutes or until potatoes are tender. Drain potatoes then let sit, uncovered, for 5 minutes to dry. Melt butter in a saucepan; add cream and cook until warm. Using a potato masher, smash potatoes until smooth. Add butter mixture to potatoes and stir until incorporated. Season with salt and pepper to taste. Serve immediately.
