Ingredients
- 1/2 c loosely packed fresh parsley leaves
- 2 T fresh oregano leaves
- 1 1/2 T drained capers
- 1/2 small shallot, chopped
- 1 T red wine vinegar
- 1 T water
- 1 garlic clove, chopped
- 1/4 t red pepper flakes
- 2 T olive oil
- 4 (5 oz) skin-on salmon fillets
- 1/4 t salt
- 1/4 t black pepper

Step 1
Puree first 8 ingredients in food processor. With motor running add oil. Transfer sauce to bowl.
Sprinkle salmon with salt and pepper. Spray large ridged grill pan with nonstick spray and set over medium-high heat. Add salmon and cook, turning once, just until opaque in center, about 6 minutes.
Remove skin and place salmon on platter or 4 plates. Drizzle evenly with sauce.
