Sweet Pepper & Chilli Sauce

A mellow, warming sauce, ideal with pasta. For a more extravagant supper dish add thickly sliced chorizo sausage with the sun-dried tomatoes.

Ingredients

  • 2

    tbsp olive oil

  • 1

    onion, chopped

  • 1

    garlic clove, crushed

  • 2

    large red or orange peppers, seeded and finely chopped

  • 1

    tsp chilli seasoning

  • 1

    tbsp paprika

  • ½

    tsp dried thyme

  • 1

    x 225 g/8 oz can chopped tomatoes

  • cups vegetable stock

  • ½

    tsp granulated sugar

  • salt and pepper

  • 2

    tbsp sun-dried tomatoes in oil, drained and chopped

Directions

Heat the oil and saute the onion, garlic and peppers for 4-5 minutes or until lightly browned. Add the chilli, paprika and thyme and cook for a further minute. Stir in the tomatoes, stock, sugar and seasoning, and bring to the boil. Cover and simmer for 30 minutes or until soft, adding more stock if necessary. Ten minutes before the end of cooking, add the sun-dried tomatoes. Serve hot with freshly cooked pasta.
