  • tablet of Mexican Chocolate, laced with cinnamon
  • sesame seeds
  • You can also doctor up the mole with cocoa powder, peanut butter, cloves, star anise.

Step 1

Place mole paste in a large saucepan. Begin adding chicken stock to loosen the paste up. You want the paste to NOT be runny!!! You want the consistency of the mole to be that of 'just thickening pudding'.

Many will then add a crushed tablet of Mexican Chocolate and additional sesame seeds. Taste as you go along. You can then add any of the following: cocoa powder, peanut butter, cloves, star anise. Don't overdo it with cocoa powder or peanut butter. Remember, you can Always add more, but once its in, you can't take it out.

Continue to heat over a low flame, allowing all of the flavors to meld together. You can heat it as long as you would like.

Use your mole to braise browned chicken, turkey or pork. or top your cooked meats with the mole. OR you can pour it over enchiladas, OR over poached eggs
