2 Tier Lemon Raspberry Cake

Ingredients
- 3 boxes 18.25 oz lemon cake mix
- 3 3/4 cups grape juice
- FROSTING
- 1 oz champagne extract (available at most cake decorating stores)
- 3 12 oz containers lemon frosting
- 1 jar raspberry jam
- 1 1/3 C lemon curd, stirred to loosen
- Several bunches green grapes
- Powdered sugar
- SPECIAL EQUIPMENT
- 1 (14 inch cake pan) with 3 inch high sides
- 1 (10 inch cake pan) with 3 inch high sides
- 1 (6 inch cake pan) with 3 inch high sides
- cardboard cake rounds 14, 10 and 6 inches
- 3/8 inch plastic dowel rods

Preheat oven to 350
Spray each pan with Pam and line with parchment paper and spray again. Follow directions on cake mix boxes to create 3 cakes of each size, but substitute grape juice for water in cake recipes. Bake each cake as per box directions or until toothpick comes out clean. Cool completely, remove from pan and cut each cake in half horizontally and level off tops if needed by cutting off rounded tops.
In a large bowl, combine frosting and few drops of champagne extract, stirring well. For each size cake, place bottom layer atop cardboard round of matching diameter. Pipe a ring of frosting around the top edges of bottom layer. Fill in center with jam. Top with other half and frost around top edges of bottom layer. Place next smaller section on cardboard and repeat frosting ring and fill with lemon curd. Top and frost around edges. Place top section on cardboard.
To assemble, cut 5 dowel sections the height of the 14 inch cake and 4 the height of the 10 inch cake. Push dowels down in center and make a ring staying inside the 10 inch cake ring. Place 10 inch cake on larger cake on dowels leaving the cardboard under the cake. Place the 4 dowels in a square pattern in the 10 inch cake being sure that they will be covered by the 6 inch cake. Place the 6 inch cake on the dowels again leaving the cardboard in place. Frost the rest of the cake and decorate with powdered sugar dusted grapes.
