Strawberry Jam Quick Bread

A lovely, soft bread ready to serve in little over an hour. Perfect served warm with butter or more jam..which is what I did. A little overboard? No! Of course not. Try it and you will agree with me.
Now..back to the crock pot to make some more....possibly, raspberry this time?

Ingredients
- 1 1/2 cup flour
- 1/2 tsp salt
- 1 1/2 tsp baking powder
- 3/4 cup white sugar
- 1/2 cup butter, softened
- 1/2 tsp vanilla
- 1/8 tsp lemon juice
- 2 eggs
- 1/2 cup strawberry jam + extra for top (jarred or homemade version can be found here)
- 1/4 cup milk

Step 1
Preheat oven to 350 degrees. Grease and flour and 9in loaf pan. In a medium mixing bowl, whisk flour, salt, and baking powder. Set aside. In a separate bowl, combine sugar, butter, and vanilla. Mix until fluffy. Add in eggs. Stir in jam and milk. Mix dry ingredients into wet ingredients. Combine well. Spoon batter into prepared pan. Spoon approx 1/4 cup jam on top of batter and swirl with knife. Bake for 45-50 minutes or until knife inserted comes out clean. Cool for 10-15 minutes before slicing.
