  • 1 lb ground hot sausage
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 Tablespoon flour
  • 64 oz chicken stock
  • 6 russet potatoes
  • 1 cup heavy cream
  • 6 cups torn kale pieces

Step 1

Cook sausage in large soup pot over medium heat, crumbling it as it cooks. When it is fully crumbled, add onion and garlic, and continue to cook until onion is translucent.

Sprinkle flour mixture over the meat; stir to combine. Add the chicken broth; bring to a boil.

Meanwhile, wash the potatoes, cut them in half lengthwise, then into 1/4-inch slices. Once soup begins to boil, add the potatoes and cook for about 20 minutes, until they are fork-tender.

Reduce heat to LOW and stir in the heavy cream and the kale. Cook for another 5 minutes, stirring occasionally.
