- 4 lbs asparagus trimmed
- 1 carrot,peeled and cut in thin strips
- 1 \4 c. Champagne or white wine vinegar
- 1 tb. Dijon mustard
- 2 tb. Whole grain mustard
- 1 \4 c. Olive oil

Step 1
Add asparagus to a boil. Blanch until tender 3-4 min.drain on paper towel. Add carrot strips to water and blanch 1-2 min. Dry. Whisk vinegar and mustard. Season. Whisk continually and add oil in a steady stream.
Transfer to platter. Garnish with carrot strips. Serve with vinegarette on the side.
