Ingredients
- 4 white or whole wheat foldable artisan flatbreads, such as Flatout® Foldit Flatbreads
- 1 1/2 cups shredded reduced-fat Monterey jack cheese with jalapeno peppers or reduced-fat Mexican-style four-cheese blend (6 ounces)
- 8 ounces shredded cooked turkey or chicken
- 1/2 cup black bean and corn salsa or fruit salsa
- 1/2 cup fresh cilantro leaves

Preparation
Step 1
Spray one side of each flatbread with nonstick cooking spray. Place spray side down on a clean surface. On one half of each flatbread, evenly divide 3/4 cup of the cheese, the turkey, salsa, and cilantro. Top evenly with the remaining cheese. Fold over.
Preheat a covered indoor grill, panini press, grill pan, or large skillet. Place sandwiches (half at a time if necessary) in grill. Cover and cook for 3 to 4 minutes or until browned and cheese is melted. (If using a grill pan or skillet, place sandwiches on grill pan or skillet. Weigh sandwiches down* and cook for 2 to 3 minutes or until bread is toasted. Turn sandwiches over, weigh them down, and cook about 2 minutes or until toasted and cheese is melted.)
