Marinated Mushrooms

Ingredients

  • 4-5 tbsp olive oil, plus extra to drizzle
  • 1 lb 2oz (SOug) white mushrooms, cleaned, trimmed, and halved if large
  • 2-3 shallots, peeled and sliced
  • sea salt and freshly ground black pepper
  • generous splash of white wine vinegar
  • small bunch of tarragon, leaves only

Preparation

Step 1

Heat olive oil in a large wide heavy pan.
When it is almost smoking, add the mushrooms and saute over high heat for about 5 minutes until they are lightly golden. Tip in the shallots and season well with salt and pepper. Saute until the shallots have softened. Add a splash of wine vinegar and let the liquid bubble for a few minutes. Drizzle generously with olive oil and allow to cool to room temperature. Sprinkle with tarragon to serve.
