Ingredients
- Chicken halves, increments of 25
- Grandmas sauce. Full batch for 100 halves
- 20# bags of Kingsford per 25 halves, plus additional bag

Step 1
Put 1- 20 pound bag of Kingsford Charcoal for each grate used.
Lite charcoal with gas
Put grates over fire to burn clean.
When flames are just about out, move racks onto horses and spread coals evenly.
Set chicken on grates, legs in, 5 wide, 5 rows, skin side up
Put grates over pits.
Cook for about 10 minutes, make sure they dont get too dark. Squirt water on any flare ups.
Flip the racks, then spritz with sauce. Cook on skin side shorter time than bone side. Every time you flip, spritz. Rotate racks or pivot to cook even over hot spots in pits.
1 hour in, while skin side up, add 1 more bag of coal to pits. Cook will slow down a little while coals are lighting.
Chicken should be done around 2 hours total.
Twist the leg bone, if it spins, its done.
