Ingredients

  • 2 Eggs
  • 1 cup Butter
  • 1/2 cup Packed Brown Sugar
  • 1/4 tsp Salt
  • 1 tsp Almond Extract
  • 2 cups Flour
  • 1 cup Chopped Pecans
  • Raspberry Jam/Preserves (can use blackberry jam/preserves)

Preparation

Step 1

Separate eggs. Beat butter. Add brown sugar and salt to butter and beat until fluffy. Beat in egg yolks and almond extract. Add flour to mixture. Shat dough into 1" balls. Roll balls in egg whites and then in chopped pecans. Arrange on ungreased cookie sheet. Bake at 375 for 5 minutes. Press center of the cookie with thumb. Bake another 7 minutes. Cool. Fill with jam/preserves
