Amish baked oatmeal casserole

A baked oatmeal cake. Cut into squares and great for breakfast.

Ingredients
- 4 eggs
- 1 c sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1 T cinnamon
- 2 tsp vanilla extract
- 2 c milk
- 1 stick unsalted butter
- 6 c quick cooking oats

Step 1
Preheat oven to 350. Butter the 9 x 13 non-stick baking dish. Place the butter in microwave and melt by heating 1-2 minutes.
Whisk eggs in a large bowl. Add sugar, baking powder, salt, cinnamon, and vanilla and mix until smooth. Add the milk and melted butter to the egg mixture and mix until combined. Add the oats and stir until combined. Put oatmeal mixture in baking dish and smooth top with the back of the spoon. Put in oven and bak 40-45 minutes until fully set. Remove from the oven and cut into squares. Serve warm. You can also mix this up and put in refrigerator over night and cook in the morning. After baked this can be stored in the refrigerator for 5 days. I wrap my individual squares and freeze them.
