Ingredients
- 1 pound butternut squash, peeled, diced, and seeded
- 3 cups stemmed, chopped kale
- 1/4 cup fresh lime juice
- 1 garlic clove, minced
- 1/4 teaspoon sea salt
- 1/2 cup dry quinoa, rinsed
- 1/4 cup dried cranberries
- 1 cup vegetable stock

Preparation
Step 1
Place all of the ingredients into the Instant Pot; secure the lid.
Press the Manual button and enter 10 minutes.
When the cook time is complete and the pressure has fully released, remove the lid with caution.
Serve immediately.
