  • 3

    slices white sandwich bread

  • cup whole milk

  • pounds ground beef chuck

  • ½

    pound ground pork

  • ½

    medium onion, grated

  • 2

    garlic cloves, minced

  • 1

    large egg

  • ½

    cup ketchup, divided

  • Salt and pepper


Preheat oven to 400 degrees Fahrenheit. Line a baking sheet with aluminum foil or parchment paper. Place bread in a food processor and pulse until finely ground. Transfer to a small bowl and stir in milk. Let sit for 10 minutes, stirring occasionally. Meanwhile, combine beef, pork, onion, garlic, egg, half of ketchup, 1½ teaspoons salt, and ¼ teaspoon pepper in a large bowl. Add bread mixture and mix gently to combine with a fork. Transfer mixture to prepared baking sheet and form into a 9-by-4-by-5-inch loaf. Transfer to oven and bake, brushing twice with remaining ketchup, until an instant-read thermometer inserted into the thickest portion registers 160 degrees Fahrenheit, about 45 to 55 minutes.
