Ingredients

  • 3 lb. green tomatoes
  • 3 medium onions, sliced
  • 1/2 cup chopped seeded red sweet pepper (1 small)
  • 1/4 cup finely chopped,seeded jalapeno peppers (4 small)
  • 4 1/2 cups white vinegar
  • 3 cups sugar
  • 2 Tbsp. mustard seeds
  • 5 tea. whole black peppercorns
  • 2 tea. celery seeds

Step 1

Wash and core tomatoes. Remove stems and cores. Cut tomatoes into 1/4" slices. Measure 12 cups tomato slices. In a large bowl combine the 12 cups tomatoes, the onion slices, sweet pepper, and chili peppers.

In a large saucepan combine vinegar, sugar, mustard seeds, peppercorns, and celery seeds. Bring to boiling, stirring until sugar dissolves. Remove from heat.

Pack tomato mixture into hot pint jars. Pour hot vinegar mixture over tomato mixture in jar. Wipe jar rims, adjust lids and bands. Process in a hot water canner for 15 minutes.
