Asian Sesame Chicken Salad 1 Picture

Ingredients

  • 2 chicken breasts
  • 1 C favorite Asian dressing for marinade, plus more for serving*
  • 1 bag butter lettuce
  • 2 C spinach
  • 1/4 C cilantro, chopped
  • 1 bunch scallions, chopped
  • 1/2 red onion, sliced
  • 1 can mandarin oranges, rinsed and drained
  • 1 can water chestnuts, drained
  • 1/4 C slivered almonds
  • 2 tbsp sesame seeds
  • 1/2 C chow mein noodles

Step 1

Marinate chicken for at least four hours, or overnight. When ready to make salad, cook chicken in a skillet and cut into bite-sized pieces. Set aside.

Build salad by combining butter lettuce, spinach, cilantro and scallions. Add onion, oranges, and water chestnuts. Toss well.

Top with chicken, and sprinkle almonds, sesame seeds, and chow mein noodles on top.

Serve with additional dressing.

**Notes**

I used Newman’s Own Lite Sesame Ginger for a marinade.
