Ingredients
- 2 Tbsp. olive oil
- 1 Tbsp. minced fresh ginger
- 3/4 lb medium shrimp
- 1/2 cup snow peas
- 1 Tbsp. curry powder
- 1/4 white wine
- 1/3 cup low sodium chicken broth
- 1/2 cup fat free cream
- 1 large zucchini
- 1/4 cup chopped fresh cilantro
- 2 thinly sliced scallions

Step 1
Sauté shrimp, snow peas and ginger in olive oil.
Add wine, curry powder and broth and reduce.
Add the cream.
Add the zucchini noodles, stir 2-3 minutes. Add the cheese.
