Fettuccine with Shrimp and Broccoli 0 Picture

Ingredients

  • 1 lb fettuccine noodles
  • 6 Tbsp extra-virgin olive oil
  • 3 cloves garlic, chopped
  • 1 lb broccoli
  • 18 large shrimp, peeled and deveined
  • 1/2 cup dry white wine
  • Salt and freshly ground pepper
  • 1 Tbsp chopped Italian parsley

Step 1

In a large frying pan, heat the olive oil over low heat. Add the garlic and sauté, stirring often, until translucent, about 2 minutes. Add the broccoli, cover, and cook, stirring occasionally, until tender, about 5 minutes.

Raise the heat to medium, add the shrimp, and sauté for 2 minutes. Add the wine and salt and pepper to taste. Cook for 2 minutes longer. Remove the pan from the heat and set aside.

Bring a large pot 3/4 full of salted water to a boil. Add the fettuccine and cook until the pasta rises to the surface, about 2 minutes.

Drain the pasta and transfer to the frying pan with the broccoli and shrimp. Add the parsley and finish cooking over medium heat, stirring often, for 2 minutes.

Arrange the pasta on a warmed platter and serve immediately.
