Ingredients

  • 1 T vegetable oil
  • 1 1/2 lbs ground beef chuck
  • 1 large onion, chopped
  • 2 large garlic cloves, minced
  • 1 T ground cumin
  • 1 12 oz can diced tomatoes
  • 2 16 oz cans pinto beans, drained and rinsed
  • 1 16 oz can red kidney beans, drained and rinsed
  • 1 12 oz bottle beer
  • 1 4 oz can diced green chiles
  • 1 T hot sauce
  • 1 1/2 t salt
  • Shredded cheddar and monterey jack cheese for garnish

Preparation

Step 1

Heat oil in 5 qt saucepot over med heat
Add beef and cool until well browned on all sides, about 5 minutes.
Remove from pan with a slotted spoon.
Add onion and garlic to the drippings and cook over med heat until tender.
Return meat to saucepot.
Stir in cumin
Cook 1 minute
Stir in undrained diced tomatoes, pinto beans, kidney beans, beer, green chiles, hot sauce, and salt.
Heat to boiling over high heat.
Reduce heat to low and cover, simmer for 20 minutes.
Serve with cheese if desired.
