Mimosa Cheesecake

Ingredients

• Shortbread crust:
• 1 C. butter, softened
• 1/2 C. sugar
• 2 1/2 C. flour
• Filling:
• 32 oz cream cheese
• 1 C. sugar
• 6 tsp corn starch
• 4 eggs, room temp
• 1/2 C. sour cream
• 1/2 C. champagne
• 1 TBS. orange zest
• 1/4 C. orange juice concentrate
• mandarin orange segments
• Topping:
• 1/2 C. sugar
• 1 1/2 tsp. corn starch
• 2 TBS champagne
• 1 TBS orange zest

Preparation

Step 1

Mix crust ingredients, bake 1-12 min until golden brown. Mix Filling ingredients. Spread orange segments over crust, pour filling over. Bake 350 for 10 min, lower temp to 200 and bake 1 hour 10 min.
