  • 4 tablespoons cane sugar
  • 4 tablespoons freshly squeezed lime juice
  • 4 tablespoons minced ginger
  • 1 stalk lemongrass, diced
  • 3 ounces Anejo tequila
  • 1 ounce Cointreau
  • ice
  • lime wedges to garnish

INSTRUCTIONS
Combine the sugar, lime juice, ginger, and lemongrass in a small pot over medium high heat and bring to a boil, while stirring constantly. Remove from heat once boiled.
In a blender or food processor, pulse the sugar ginger mixture till pureed.
Strain through a sieve and save the liquid.
Rim two rock glasses with salt and fill with crushed ice.
Combine the sugar ginger syrup, tequila, and cointreau in a cocktail shaker with at least two cups of ice and shake vigorously.
Pour the drink between the two glasses and garnish with a lime wedge.
