Ingredients
- 2 pounds chicken breast, cut into bite-sized pieces
- 2 tablespoon olive oil
- 1 clove garlic, minced
- 1/4 teaspoon ginger
- 3/4 teaspoon crushed red pepper flakes
- 1/4 cup apple juice
- 1/3 cup brown sugar
- 2 tablespoon ketchup
- 1 tablespoon cider vinegar
- 1/2 cup water, divided
- 1/3 cup soy sauce
- 1 tablespoon corn starch (optional)

Preparation
Step 1
Heat oil in large skillet. Add chicken and cook until lightly browned.
In a separate saucepan add all other ingredients except corn starch and bring to a hard boil for 5 minutes. Remove from heat.
Stir in corn starch mixed with a 1/4 cup of water. Stir well.
Pour over chicken and heat to boiling, stirring constantly. Reduce heat and simmer 5 minutes.
Serve hot over rice.
Delicious with cashew nuts added.
