Ingredients

  • DRESSING:
  • 1/2 cup chunky peanut butter
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon lemon juice
  • 2 cloves garlic, crushed
  • 1 teaspoon Chinese chili sauce
  • 2 tablespoons brown sugar
  • 1 cup plain yogurt
  • 2 tablespoons toasted sesame seeds
  • ASPARAGUS:
  • 36 to 42 asparagus spears (allow 6 per person)
  • Zest of 1 lemon
  • 1/2 cup toasted sesame seeds
  • 1 leafy or butter lettuce

Preparation

Step 1

Dressing:

Combine all ingredients in a food processor or blender, cover and store in the refrigerator. To serve, bring to room temperature and thin with a little yogurt if necessary.

Asparagus:

On the day of serving, trim and clean the asparagus and simmer for a minute or two in boiling water until just tender-crisp. Don't overcook.

Drain and chill in ice water. Pat dry and refrigerate. Serve the asparagus on a large lettuce lined platter. with the dressing in a bowl in the center. Sprinkle sesame seeds and lemon zest over the asparagus. Let everyone help themselves, using their fingers to dip the asparagus into the sauce.

For more formal occasions, divide the asparagus between 6 small salad plates, garnish with lettuce and drizzle with the sauce, sesame seeds and lemon zest.
